What a life!

Hi all!

Mike and I were laughing last night about how different our blogging styles are. I apologize for those who prefer his witty antics, he will blog more once we have Internet in our house! For now, I'll do my best.

Let me tell you, this is the life. So far today:

I saw Mike off to work, then I sat with a cup of tea and listened to Radio Scotland for the day's news and weather. (A lovely day, by the way!)

I went for a run along the beach, with gorgeous views of the islands and the cool castle up the coast.

I ate my fantastic GF cinnamon raisin bagel (thanks, mom, for the toaster bags!).

I went to the library and got my library card!! Wahoo! It's official, I have a library card!

I researched buying tickets for Fringe shows. Right now, we're planning to go see Axis of Awesome (how Mike is that name? Seriously. Awesome.), Best of the Fest, and the Comedy Bus. Check it out! Edinburgh Fringe Festival

Today I tried a new coffee shop, the Sugar Cube. The guy had a crazy mohawk but he acted much sweeter than he looked, AND he was a baker! Maybe that's what Mike was trying to prove with all those hawks, looks CAN be deceiving!

Next up, back to the GROCERY STORE! Yesterday did not disappoint, for those of you who wondered. Morrison's is great. Things are packaged better here, smaller and more portable for my 0.7 mile walk home. I bought some delish black currant preserves yesterday. Today I'm going to get some hand-cut marmalade.

I have no GF guides from yesterday except the grocery store, but I will share my awesome dinner recipe:

Mediterranean Chicken
(serves 2!)

2 chicken breasts
10 cherry tomatoes
1 cup mixed olives (I pitted them)
3 cloves garlic
1/2 lemon, juiced (I bought a reamer for this purpose yesterday, EVERYBODY needs a reamer.)
salt and pepper
awesome parm.
GF pasta (it's great here, not too sticky or crumbly)

Prepare the Sauce:
Crush tomatoes, garlic, and olives with a masher, save all that juice!
Juice the lemon into the mix and add salt and pepper.
Let this sit at room temperature for a while to mingle and get friendly.
Cook pasta according to directions on the package.
Cut chicken breasts into strips, pan sear until browned and mostly cooked through.
Add the sauce and simmer for a few minutes.
Add the pasta and 1/4 cup of the pasta water to starch it up.
Simmer for another minute.
Put in serving bowl and shave strips of parm with a vegetable peeler on top.
YUM!
